Ingredients
The Salad

chopped curly kale

baby spinach

dried cranberries

sliced almonds

chickpeas

tofu cubes
The Dressing
▢

Tablespoons
olive oil
▢

teaspoons
freshly squeezed lemon juice
▢

teaspoon
finely grated lemon zest

Dijon mustard

freshly ground black pepper

agave nectar or maple syrup
Instructions
Combine all salad ingredients (greens through tofu) in a bowl or bag and shake or toss to combine.
Make the Dressing
In a small bowl, blend dressing ingredients together then coat salad with as much dressing as you like. Any remainder can be used for future salads.
