1head iceberg lettuce, cut into small, bite-sized chunks
1pintcherry tomatoes
1/4cupcreamy unsalted peanut butter
2tablespoonsrice vinegar
1lime juiced with seeds removed
3tablespoonsolive oil
1tablespoonsoy sauce
2tablespoonshoney
1teaspoonsugar
2garlic cloves, minced
1-inchsquare piece fresh ginger, grated
1/4teaspooncrushed red pepper flakes
2tablespoonsfresh cilantro leaves
Instructions
For the dressing, combine all of the ingredients except for the cilantro in a blender and process until completely smooth. Add the cilantro and blend for a few seconds until the cilantro is finely chopped. Refrigerate until ready to serve.
Using 10 wooden skewers, skewer cucumber, lettuce and tomatoes then drizzle with dressing or serve on the side for dipping.
